In an effort to simplify our home, I’ve been working to use our Instant Pot more for dinners. It’s such a good little work horse and has made dealing with food allergies much easier. Someday, I might even get around to sharing our super delicious IP coconut milk yogurt recipe. I digress.
Meals are a frequent occurrence at our house because my hobbits children like to eat. A lot. So I use our Instant Pot for (gluten free) steel cut oats, hard boiled eggs, chicken for chicken salad, and several other breakfast and lunch meals. But I only have a few soups and meatballs that I make in the Instant Pot for dinner.
I know, I have been under utilizing my Instant Pot. And in an effort to rectify that, we found an amazing and easy IP steak fajitas recipe that we are sharing with you! Plus there’s a giveaway at the end of this post and you can win an Instant Pot to help you simplify meal times at your house.

Easy Instant Pot Steak Fajitas
For super awesome flavor, fresh spices are a must! We enjoy using spices from Raw Spice Bar.
Ingredients
2 to 3 pounds flank steak or London Broil sliced into strips
1 tablespoon avocado or olive oil
1 onion, sliced
3 bell peppers in various colors, seeded and sliced
1 ½ cups beef broth
¼ teaspoon dried oregano
½ teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon chopped chipotle peppers in adobo sauce, optional
Instructions
- Set Instant Pot pressure cooker to saute and heat until “hot.” Add avocado or olive oil and sliced steak in small batches to brown on both sides. Set aside and keep warm.
- Pour beef broth into pressure cooker and scrape the bottom with a flat edge spoon to get all the yummy bits off the bottom.
- Add steak to pressure cooker as well as seasonings and vegetables.
- Close and set the valve to sealing. Set the pressure cooker to manual or pressure cook for 8 minutes. Naturally release for 5 minutes before a quick release.
- Serve alone, with tortillas (we love making tortillas with Otto’s Cassava flour!), or over cauli-rice.
