We like easy meals at this point. The morning is difficult for me to get moving at this point since I’m uncomfortable enough that I can’t sleep well, and I don’t like feeding my family processed cold cereal (the boys don’t mind, but I do!) or a banana every single day. Enter muffins! Maybe even some mini-fritattas this week if I get the extras ready the night before so all I have to do is crack the eggs in the morning. These muffins are healthy, yummy and can be modified to whatever berry is your favorite/in season.
Berry Oatmeal Muffins
3/4 cup organic rolled oats
1/4 cup flax seed
1 1/2 cups spelt flour
1/2 cup sucanat or honey
1/2 cup chopped almonds (I used almond meal since Mr. Glam doesn’t “like” nuts in his food)
1/2 teaspoon of salt
1 TBS aluminum free baking powder
1 tsp baking soda
1 TBS ground cinnamon
1 cup milk
1/2 cup applesauce
1 egg
1 1/4 cup berries of your choice (I used blueberries and raspberries this time)
Preheat oven to 400 degrees and lightly grease 12 muffin cups.
In a large bowl, mix dry ingredients well. In a small bowl mix milk, applesauce and egg. Add the wet ingredients to the dry and mix well, let the mix sit for 10 minutes them fold in your berries. (This lets the oats soak up some moisture before you bake them).
Scoop the batter into the muffin cups and bake for 15-20 minutes until a toothpick inserted into the muffins comes out clean.
