
Part of Mr. Ts treatment plan currently is a gluten, dairy and soy free diet. It’s expensive and tough, and Mr. T has had some trouble adjusting. So have I. But thankfully I have friends and Pinterest. I have a seriously awesome Gluten Free board. Check it out!
The above picture is of a great dessert I modified off a Pinterest recipe. It’s coconut cream, cocoa powder, vanilla and honey topped with AH!Laska Organic Chocolate Syrup, for the boys. It is supper yummy chocolate pudding consistency!
Gluten and Dairy Free Chocolate Pudding
1 can of chilled coconut cream
1-2 TBS cocoa powder (depending on how chocolate you like it!)
1 tsp vanilla extract
2 TBS honey (If you’re a mama wanting a treat, use 2 TBS of xylitol, powdered after measuring, or stevia powder to taste)
With an electric mixer, whip the coconut cream until it is fluffy like whipped cream. Slowly add in the cocoa followed by the honey or xylitol/stevia and vanilla.
Put into your serving bowls and chill until it is time to serve them! Drizzle with chocolate sauce and garnish with fruit if you like.

It was a hit! Thankfully Mr. T stopped short of eating the glass (thrift store finds!). But we are getting the hang of the non-dessert side of this diet, too. Mr.T is learning to eat veggies. Slowly.
